【材料一】

    冬至节历史悠久。周代以十一月为正,已有祭神仪式。秦代沿其制,也以冬至为岁首,这就是把冬至视为“过年”“过小年”的历史原因。南北朝时,民间有拜父母之礼,吃赤豆粥以辟邪之俗。唐宋时,冬至与岁首并重。明清仍承冬至过节习俗,节日期间,有祭天、祭祖、送寒衣、宴饮、腌制鱼肉等习俗。

    冬至节,节日饮食有鲜明的冬令特点。北方有“冬至饺子夏至面”之谚。认为冬天寒冷,耗热量多,应该多吃有营养的食品,饺子、馄饨是冬令佳品。朝鲜族在冬至日必须吃冬至粥。福建有冬至吃糯米丸之俗。“前数日,阖家老幼,将糯米粉制成银锭、银圆、荸荠等形。初作时,必先搓小丸,俗称搓丸。冬至早晨,将所制糯米食品,用红糖拌匀,祀神祭祖之后,合家分食。”(选自《中华全国风俗志》)北方地区喜欢在冬至前后腌制酸菜,南方地区在冬至后腌鱼腌肉。

【材料二】

    腊八节,又名成道节。中国远古时期,“腊”本是一种祭礼,自从佛教传入后,腊八节才确立了节日具体时间,加入了吃腊八粥的内容。据传,释迦牟尼苦修时,曾饿倒于地,幸得一位牧羊女以大米奶粥喂食,才免于饿死。后于十二月八日得道成佛。佛门弟子为纪念此事,在腊八这天作佛会,熬粥供佛或施粥贫者;民间也做腊八粥,或阖家聚食,或祀先供佛,或分赠亲友。宋代《东京梦华录》记载:“初八日,街巷中有僧尼三五人,作队念佛,扬枝洒浴。诸大寺作浴佛会,并送七宝五味粥与门徒,谓之腊八粥。都人是日各家亦以果子杂料煮粥而食也。”《清嘉录》卷十二:“八日为腊八,居民以菜果入米煮粥,谓之腊八粥。或有馈自僧尼者,名曰佛粥。”腊八粥的用料各地有异,但多选用大米、糯米、菱角米、栗子、红豆、红枣、核桃仁、松子等混合制作而成。

    除夕这一天家家户户要吃年夜饭。年夜饭讲究全家团聚。为此,外出的人纷纷回家过年,没有回来的人,也要给他留一个座位,摆上碗筷,象征他也回家团聚了。吃年夜饭的时间多选择在夜间,取一家团聚不被打扰之意。年夜饭席中一定有酒有鱼,取喜庆吉祥、年年有余之意。人们吃年夜饭不仅要吃饱,还要喝足,即使是平日不许沾酒的小孩,此时也可品尝酒水。中原及北方广大地区还要在除夕吃饺子,在包饺子时,要往其中置钱、糖、枣等,祈求好运。正月初一客人来拜年,主妇先敬茶一杯。清代叶调元《汉口竹枝词》云:“殷勤留坐端元宝,九碟寒肴一暖锅。”注云:“正月饮茶饮酒用元宝杯,谓之端元宝。”元宝杯绘有元宝或钱币图形,以示吉祥发财之意。后来用元宝茶,一般取红枣沿腰切口,四周嵌入瓜仁,冲白糖开水。春节期间待客以元宝茶的风俗也相当普遍,如民国四年刊《汉口小志》:“拜年客来,多留吃元宝茶,或摆果盒以待。”果盒中装有年糕、蜜枣、糖莲子、柿饼等,分别寓意年年高升、早生贵子、连生贵子、事事如意。

    元宵节一向为社会各阶层民众所重视。该日为满月,满月象征团圆、美满。是日,要进行祭天,合家团圆,祈求丰年。《明宫史》记载:“正月初九日后,吃元宵,其制法,用糯米细面,内用核桃仁、白糖为果馅,洒水滚成,如核桃大。”很多人以为元宵又称汤圆,其实不然。从地域来看,元宵的叫法主要在北方,汤圆的叫法多在长江流域以南。做元宵,首先需将和好、凝固的馅切成小块,过一遍水后,再扔进盛满糯米面的笸箩内滚,一边滚一边洒水,直到馅料沾满糯米面滚成圆球方才大功告成。简而言之,元宵是滚出来的。而汤圆是包出来的,把做馅的各种原料拌匀,包进糯米团中。上海的汤圆独具特色,甜汤圆蜜渍香泛,溅齿流甘,甜得不知道什么叫甜了;咸汤圆,肉馅精纯,肥瘦适当,切剁如糜,膏润芳鲜。另有一种鸡肉芥菜的,看似碧玉溶浆,清汤浅摇,袅袅然一种菜根香味暗涌。
