    ②胡萝卜和生菜、芹菜属于植物中的一大类，但它质脆味美，更受大部分家庭主妇青睐。胡萝卜栽培广泛，其根部富含营养物质，如胡萝卜素和多种维生素等，是世界各国饮食中的重要组成部分。

    ③美国威斯康辛大学麦迪逊 分校的菲利普•西蒙和他的研究团队完成了对30余种胡萝卜样品的基因测序，绘制出了胡萝卜基因组序列草图。这很可能是迄今最完整的蔬菜基因组序列草图，相关论文在线发表在《自然•遗传学》杂志网站上。

    ④菲利普•西蒙和他的研究团队使用一根胡萝卜的DNA组装了一个高质量的参照基因组，确认了胡萝卜共有32113个基因，其中有10530个基因是胡萝卜特有的。而后，他们对包括野生种和栽培种在内的35个不同品种的胡萝卜样品和亚种进行了测序。研究人员称，这一研究不仅使我们比以往任何时候都了解胡萝卜的所有营养物质和组成成分，而且阐明了胡萝卜的起源和演化过程。他们把胡萝卜的基因组序列和其他植物进行了比较，来确认在进化道路上，胡萝卜的祖先究竟是何时与葡萄、猕猴桃以及西红柿“分道扬镳”的。

    ⑤此外，他们在胡萝卜根部发现了一个负责积累维生素A前体的基因，正是这个基因让胡萝卜积累起特别多的β胡萝卜素。研究人员表示，这一研究为改善胡萝卜和其他农作物的营养价值提供了可能，不仅能够帮助胡萝卜育种者改善胡萝卜的口感和营养价值，未来还有望让其他农作物具备胡萝卜的“特长”，使口味更好，更有营养。
