家乡的小枣

    ①枣有多种吃法,枣可以入菜,可以有多种做法,但我从来没有见过这样的吃法,这样的做法。

    ②一般用枣做菜,枣只是陪衬,比如红枣煨肉,枣只是肉周围一圈的护兵,将军肯定还是中间昂昂然的肘子肉。在家乡沧县吃的这道菜,却是全部用小枣做成的。一盘端上来,红扑扑的,玛瑙一样层层叠叠全是枣。做法是将枣去核后,中间塞上黏面,使得这道菜红白相间,色彩多了一份明快。再浇上一层拌有桂花的浓汁,又使得这道菜玲珑剔透、晶莹透明,还多了一份浓郁的香味。

    ③关键是这道菜不仅看起来赏心悦目,吃起来更有味道,一颗颗小枣虽然只有手指甲盖大,枣肉却厚实有劲,夹上黏面,就更有嚼头。黏面中不用加糖,小枣本身就足够甜的了。北方人都爱吃黏面,有了这层黏面,绵绵软软之中,多了扯不断理还乱的回味。

    ④我是第一次吃这样新鲜而有味道的菜,只有在家乡才能吃到这样的菜。家乡沧县被称为枣县,到处是枣树,光枣的品种就有两百多种。说起家乡的枣,打我小时候记事时起就知道。虽然,父亲年轻时候就离开了沧县,我们一家人一直住在北京,但最让他骄傲的就是沧县的武术和小枣,不知多少次提起过沧县的小枣,说得他的嘴唇、听得我的耳朵都起了茧子。家乡人从老家给他带来小枣,是让他最高兴的事了。那种来自家乡的小枣,对于父亲来说一眼就能认出来,就像一眼就能认出自己的乡亲一样;对于我来说,虽然一眼认不出来,看不出它和其他地方的枣的区别来,但只要吃上几颗,就会和别的枣判若两人般分得清爽。

    ⑤那时,我家住的大院里有两棵枣树,秋天打枣,曾是我们孩子的节日。但那枣吃起来,确实不如沧县的小枣甜。当然,甜不是沧县小枣比别的枣多出的惟一优势。有一阵子在北京到处卖一种叫做伊拉克蜜枣的,甜是足够的甜,父亲说甜得齁嗓子,哪儿赶得上老家的枣!老家的枣,刚下树甜中带脆;晒干了甜而绵软。

    ⑥家乡的小枣,一直弥漫在父亲的回忆里和对我们的絮叨里。

    ⑦可惜父亲从未吃过用家乡小枣做的这道菜。

    ⑧回到北京,我如法炮制,也做了这样一道菜。枣是从家乡带回来的,用料和步骤完全一样,但做出的味道却和那天在沧县吃的不一样。真是怪了,莫非真是橘易地而成枳吗?

    ⑨毕竟那是在家乡。
